October Favorites

October is spooky season and Fall is officially in full swing. There’s something special about the changing seasons and excitement in the air as the days grow shorter and the air crisp and cool (well, at least in some places. 😅) What are your October plans? Check out our current fall favorites and share yours with us on social media!

What we’re listening to
"Bury a Friend" — Billie Eilish 🎶
The eerie chorus of this song is just what we need to update our Halloween party playlist.  A bit more haunting than “Ghost Busters” and “Monster Mash,” Billie Eilish’s ominous tune is complete with unexpected background screams that have us imagining we’re walking through a creepy cemetery on Halloween night.

Currently Binging
Stranger Things 📺
A missing boy in a small town, creepy, top-secret government experiments, and a very strange little girl...what more could you ask for to get you in the spooky spirit? This series is the perfect show to cuddle up with a blanket and binge tonight.

What we’re smelling
Pumpkin Spice 👃
Is pumpkin spice still basic? We don’t even care. If you’re not a coffee lover or candle lighter, grab a bottle of the spices (or make your own with cinnamon, nutmeg, cloves, allspice, and ginger) and sprinkle it on your toast, tea, or mix it in whatever you’re baking this week.

Current craving
Homemade Chili 🎃
This recipe is a staple for busy fall nights because it’s one of those dishes that gets better over time. With just a little prep, you can leave it simmering for hours in the crockpot and come home to a delicious smelling house and fully cooked meal at the end of a long day. Here’s our go-to recipe.

Ingredients:
1 lb ground beef (at least 80% lean)
1 cup chopped onions
3 cloves garlic, finely chopped, or 1/2 tsp garlic powder
1 Tbsp chili powder
2 tsp chopped fresh or 1 tsp dried oregano leaves
1 tsp ground cumin
1 tsp smoked paprika
½ tsp salt
1 can (14.5 oz) diced tomatoes, undrained
1 can (15.5 oz) red kidney beans, drained and rinsed.
1 can (15.5 oz) pinto or cannellini beans, drained and rinsed.

For serving:
Shredded cheddar cheese
Sour Cream
Green onion (chopped) or jalapeño (deseeded and minced)

Directions:

  1. Brown the beef, onions, and garlic over medium heat until fully cooked (about 10 min) then drain excess liquid. Transfer to a slow cooker.
  2. Add in spices and the can of diced tomatoes and let simmer on low for 4-6 hours.
  3. 15 minutes before serving, add in the drained and rinsed beans and stir.
  4. Add salt and pepper to taste and serve with shredded cheddar cheese, a dollop of sour cream and green onion or kick it up a notch with jalapeño.
